Elote is Mexican street food in the literal sense: corn grilled over coals, rolled in crema and salty cheese, dusted with chilli and lime, and eaten from the cob on a stick. Served off the cob in a cup it becomes esquites. The distinction between street tacos and the Tex-Mex plate is one of design rather than authenticity — street tacos are small, doubled on corn tortillas so they do not tear, and meant to be eaten several at a time standing up.
