Dixie Drive runs through the south-western side of the city between Bloomington and the Santa Clara River, which is residential ground rather than visitor traffic — so the café serves the neighborhoods around it rather than people passing through. Elevato takes its name from the Italian for 'raised' or 'elevated'. The distinction between drip coffee and espresso is extraction rather than strength — drip runs slowly through a coarse grind under gravity, espresso fast through a fine grind under pressure, and the same bean gives two quite different results. Dixie Drive's catchment is residential, which shapes a café toward regulars rather than passing custom.
