About the food
Opening a sushi bar in St. George in 2001 meant building the audience as well as the restaurant, in a market that had essentially none. Teppanyaki — a flat steel griddle worked in front of the guests — is a post-war Japanese invention aimed largely at foreign diners, and it is a different discipline from the sushi bar it usually shares a building with. Running both under one roof is the standard American compromise and demands two separate kitchens in practice.
