Background
Açaí bowls reached the mainland United States by way of Hawaii and southern California surf culture, having been a working food in Brazil first. Because the pulp is shipped frozen and blended from frozen, an açaí bowl is closer to a dessert in construction than to a juice. Bubble tea, sold alongside, is Taiwanese, and its pearls are tapioca made from cassava starch.
