Cold Stone Creamery was founded in Tempe, Arizona in 1988, and the frozen granite slab is the entire concept: ice cream is turned out onto the cold stone and mix-ins are folded through it in front of the customer, so the flavor is assembled rather than scooped from a tub.
About the craft
The frozen stone works on simple physics: chilled well below freezing, the granite holds the ice cream firm while it is folded, so mix-ins can be worked through without the base melting into soup. It also makes the assembly visible, which is half the appeal — the preparation is the show.
