About the food
Texas-style barbecue means beef, smoke and salt-and-pepper seasoning rather than the vinegar or tomato sauces that define the Carolinas and Kansas City, and brisket is the cut it is judged on — a tough, heavily worked muscle that needs many hours at low heat before the connective tissue turns to gelatin. Hurricane sits on the eastern side of Washington County on the way to Zion National Park, and State Street is its main through-route. Best of State is judged annually, which is why the four years are named.
