Red sand is the reason airing down is the first technique anyone learns here. A tire at highway pressure presents a small, hard footprint that digs; releasing air lets the casing spread and lengthen the contact patch so the vehicle floats over the surface instead of trenching into it, which is what makes Sand Mountain and the dunes passable at all. It has to be reversed before pavement, because a soft tire at highway speed builds heat quickly and can roll off the bead in a hard turn — which is why an onboard air source is standard equipment rather than an accessory. Lifting a vehicle brings its own chain of consequences: driveshaft and constant-velocity joint angles change, steering and suspension geometry moves, and the taller tires that usually follow alter the effective gearing, the speedometer calibration and the braking distance. Doing the lift is the easy part; correcting for it is the work.

Why do people air down before driving on sand?
To spread the tire footprint. Lower pressure lets the casing flatten and lengthen, which spreads the vehicle weight over more surface so it floats rather than digs. It is the single most effective thing you can do in soft sand, and it costs nothing.
Does a lift kit change anything besides ride height?
A great deal. Driveshaft and CV joint angles change, steering and suspension geometry moves, and the larger tires normally fitted afterwards alter effective gearing, speedometer accuracy and stopping distance. A properly executed lift includes correcting for those, which is most of the labor.
